After harvesting the ripe coffee cherries, the beans must go through various steps to become green coffee beans. Microorganisms\u2014yeasts and bacteria\u2014play a vital role in the fermentation process. Developing a starter culture is important and involves selecting microbes with specific traits, such as the ability to break down mucilage and withstand stress during fermentation. Currently, the green coffee beans produced by Adaptocare, through one of the aforementioned processing methods, are fermented with selected microorganisms to enhance the flavor and aroma of the coffee.
